I love making these Pumpkin Pie Overnight Oats in my favorite Overnight Oats Jars (opens in a new tab) or mason jars (opens in a new tab). They only take about 5 minutes to put together and are perfect for busy weekdays! Here’s how to make Pumpkin Pie Overnight Oats:

*The recipe has recently been updated since the making of this video to swap out the stevia for maple syrup. It’s so yummy!

  1. Combine the oats, protein powder, pumpkin spice, pumpkin puree, milk, and syrup, then mix.
  2. Divide into jars.
  3. Melt the white chocolate and coconut oil, then slowly add in the yogurt for the optional topping.
  4. Smooth it over each jar or add toppings of choice, add lids, and store in the refrigerator overnight.
  5. Enjoy them in the morning!

TIP: Feel free to adjust the amount of milk to taste. More milk will make a thinner, creamier texture. Less milk will thicken the oats!

  1. Mix the oats, protein powder, pumpkin spice, pumpkin puree, milk, and syrup together.
  2. Scoop into jars or bowls.
  3. Melt the white chocolate chips and coconut oil in the microwave, stirring every 30 seconds until smooth.
  4. Whisk in the yogurt into the white chocolate mixture, 1 Tablespoon at a time, stirring until smooth.
  5. Smooth the topping over each overnight oats jar and lightly dust with extra pumpkin spice.

    What if you don’t have white chocolate chips. Could you just top it with Greek yogurt with a little maple syrup or honey?
