All you need is a large mixing bowl and a non-stick skillet to make these yummy Pumpkin Oatmeal Pancakes! They can also be completely made in a blender or food processor. Here’s how to make this pumpkin pancake recipe:

  1. Whisk together pumpkin puree, eggs, milk, vanilla, and maple syrup.
  2. Add oat flour, baking powder, pumpkin spice, and a dash of salt.
  3. Mix just until well combined.
  4. Pour a scoop of batter onto a heated non-stick pan (opens in a new tab) with oil or butter.
  5. Cook for 1-2 minutes on each side over medium heat, or until golden brown.
  6. Add your favorite toppings and enjoy!

TIP: If freezing, it helps to place a small sheet of parchment paper between pancakes to keep them from sticking together!

  1. In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, vanilla, and maple syrup.
  2. Add in the remaining dry ingredients, making sure to spoon and level the flour.
  3. Whisk just until well combined.
  4. Heat a non-stick pan with oil (or butter) over medium/low heat.
  5. Use a 1/3 scoop to pour the batter onto the pan and spread the top out smooth. The batter will thicken as it sits, but this means thicker pancakes!
  6. Cook on each side for 1-2 minutes.
  7. Top pumpkin pancakes with yogurt, nut butter, chopped nuts, or maple syrup, and enjoy!

    We make these every few weeks and absolutely LOVE them! We cook them in coconut oil and love the flavor it adds. I like to top them with either sliced bananas and/or a bit of almond butter, or they are great just on their own! We look forward to having these pancakes every time we make them, they are a real treat.

      I don’t think those would quite turn out the same, but you can make your own oat flour by blending oats!
