Ingredients

  • 1/4 cup sriracha (opens in a new tab) (or any hot sauce)
  • 2 Tablespoons coconut aminos (opens in a new tab)
  • 2 teaspoons minced garlic
  • 1 1/2 pounds chicken breast (opens in a new tab) (about 2-3 medium)
  • 8 medium corn tortillas
  • 2-3 Tablespoons plain Greek yogurt (or sour cream)
  • 1 cup finely chopped red cabbage
  • 1/2 cup chopped bell peppers
  • 1/2 cup crumbled feta cheese (or cotija)
  • freshly squeezed lime juice (to taste)
  • chopped green onions (optional, as topping)

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Mix the sriracha, coconut aminos, and garlic. Set aside about 2 Tablespoons of the sauce.
  3. Place the chicken in a lightly oiled baking dish or sheet pan with high sides and coat evenly with the rest of the sriracha mixture.
  4. Bake for 25-30 minutes (or until fully cooked).
  5. While the chicken is baking, heat the tortillas up on the stovetop or microwave.
  6. When the chicken has finished baking, shred it with two forks, mixing any liquid in the baking dish into the shredded chicken.
  7. Whisk the set aside sauce with the yogurt or sour cream to create a dressing.

    This is one of my favorites. I usually double it because my family devours it. And it is so quick and easy! I cannot recommend it enough. I just made it and realized I did not have as much chicken on hand as I thought so it didn’t make as much as I hoped. I have some ground beef and was wondering if I could brown the beef and then simmer it in some of this sauce for beef tacos too. Don’t know how that would taste but the sauce seems like it would be good on anything.

    I make a lot of tacos and fajitas so I almost didn’t try “another” taco recipe. This looked easy though and I needed easy. Oh my word, they were amazing. My whole family loved them. I made a chipotle mayo with chipotle in adobo sauce instead of using the left over siracha sauce, just wanted to add the smokiness, but otherwise made it exactly as written. The slaw was so simple but so good also. This will be a staple in our rotation.
