Healthy S’mores Recipe

There’s nothing like biting into a sweet, melt-in-your-mouth chocolatey s’more! I crave these in the cooler months because they’re perfect around the campfire, but I also love having them on hand during warm summer nights after a day outside. My kids love them, too!

These Healthy S’mores are also easy to make. Simply bake the homemade graham crackers, whip up the marshmallows, and add your favorite healthy dark chocolate (or vegan chocolate). You can also save time with store-bought ingredients!

Ingredients

Homemade Gluten-Free Graham Crackers

Make your own gluten-free graham crackers, or feel free to use store-bought ones instead!

Healthier Marshmallows

Based off of The Urban Poser’s Paleo Marshmallow Recipe (opens in a new tab), or use a store-bought healthier marshmallow option.

  • Water
  • Gelatin (beef or plant-based for a vegan option)
  • Honey or maple syrup
  • Vanilla Extract
  • Salt

Dark or Vegan Chocolate Squares

Choose a high-quality dairy-free dark chocolate bar (70% cocoa or higher) or make your own chocolate by melting together:

  • Coconut oil
  • Cocoa powder
  • Maple syrup
  • Salt

How to Make Healthy S’mores

Making these Healthy S’moes are a lot of fun and super easy! The graham crackers are super simple, and while it does take some time (and planning ahead) for the marshmallows to set, they’re SO worth it. These delicious Vegan Marshmallows (opens in a new tab) are a great option if you want to skip making your own!

Here’s how to make Healthy S’mores:

1. Make the graham crackers.

Mix the ingredients together, then roll the dough out into a baking pan with two sheets of parchment paper. Cut into rectangles or squares and bake!

2. Whip up the marshmallows.

Combine gelatin and water, then create a syrup made with honey and water. Pour into the gelatin, then whip on high speed with a mixer and slowly add in the vanilla and salt. Spread into a pan and let set for 4 hours (or more), then cut into squares.

3. Assemble the s’mores.

Roast the marshmallows (optional, but so good!), then sandwich between graham crackers and chocolate. Enjoy!

Tips

  • Another option is to lay all of the graham crackers out on a baking sheet with the chocolate, then warm just until the chocolate melts. Add the marshmallows to each s’more and top with another graham cracker!
  • Place the chocolate square on a graham cracker and heat it up for about 10 seconds in the microwave. Then put the roasted marshmallow on it, and the chocolate melts to perfection!

Ingredients

Gluten-Free Graham Crackers

Healthy Marshmallows + Chocolate

  • 1 cup water (divided)
  • 3 Tablespoons gelatin (beef or plant-based for a vegan option)
  • 1 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 12 squares dark chocolate (or vegan chocolate)

Instructions

Make the Graham Crackers

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a bowl, mix together the almond flour, coconut flour, tapioca starch, cinnamon, baking soda, and salt.
  3. In another bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
  4. Pour into the dry ingredients and combine to form a dough.
  5. Between two pieces of parchment paper, roll out the dough to about 1/4 inch thickness.
  6. Cut into about 24 rectangles or squares and prick each piece with a fork to create the classic graham cracker appearance.
  7. Bake for 10-12 minutes, or until golden. Allow to cool completely.

Make the Marshmallows

  1. In a mixing bowl, sprinkle gelatin over 1/2 cup of water. Let it bloom.
  2. In a saucepan, combine the remaining 1/2 cup of water and honey.
  3. Bring to a boil and let simmer until it reaches 240 degrees F on a candy thermometer.
  4. Slowly pour the syrup into the bloomed gelatin while mixing on low.
  5. Once combined, increase to high speed and whip until it becomes thick and fluffy, about 10-15 minutes.
  6. Add vanilla and salt in the last few minutes.
  7. Spread the mixture into a parchment-lined pan and let set for at least 4 hours or overnight. Then, cut into 12 squares.

Assemble the S'mores

  1. Roast each marshmallow over a stove flame or briefly under a broiler.
  2. Sandwich the marshmallow and a piece of dairy-free chocolate between two graham cracker pieces.
