These gluten-free and healthy pancakes are so fun for weekend brunch! For the topping, these dark chocolate chips (opens in a new tab) are the BEST and melt perfectly. I also love adding these vegan mini marshmallows (opens in a new tab)!

How to Make Healthy S’mores Pancakes

Here’s how to make Healthy S’mores Pancakes in 3 easy steps:

1. Blend the S’more Pancake Batter

The pancake batter is super easy to make! Everything is blitzed in a blender and then dolloped in a hot pan to make light and fluffy pancakes. The batter is made with vanilla protein powder to give you a little protein kick ready for the day ahead!

2. Cook the Pancakes

Cook each pancake for a few minutes on each side in a non-stick pan! They’re perfect for a healthy but splurgy weekend brunch or make them in advance and eat them throughout the busy week.

3. Add the Topping

I love the simple topping of chocolate, maple syrup, and marshmallows but you could also add chopped nuts such as cashews, walnuts, pecans, hazelnuts, or even nut butters like almond or peanut butter!

Tips For Making Healthy S’more Pancakes

  • Remember to grease the skillet or frying pan with oil before cooking the pancakes!
  • Once the pancakes are cooked you can let them cool and store them in an airtight container for up to 4-5 days.
  • I recommend waiting to add the topping right before you enjoy these protein pancakes.
  • Use good-quality chocolate for this recipe, dark chocolate would work best but you could use your favorite!
  • Try placing the pancakes under the broiler for a couple of minutes to melt the marshmallows, just like s’mores!

Healthy S’more Pancakes

Healthy S’more Pancakes are a gooey, sticky, messy, chocolatey, delicious disaster. As s’mores were always and forever more meant to be.

Ingredients

  • 1/4 cup real maple syrup
  • 1/4 cup dark chocolate chips
  • 1/4 cup mini marshmallows

Instructions

  1. Blend all of the pancake ingredients in a blender until smooth.
  2. Spray a non-stick skillet with coconut oil and set over medium heat.
  3. Cook the pancakes on each side for about 1-2 minutes or until bubbles start to form on the top.
  4. Repeat until all batter has been used. It will thicken as it sits, so add more milk as needed, but thicker batter yields fluffier pancakes.
  5. Melt the dark chocolate chips in a glass container. Add the maple syrup, then pour the mixture over the pancakes and top with marshmallows.
  6. Serve and enjoy!
