Strawberry Cheesecake Parfaits – The BEST Healthy Breakfast!

I have been making these Strawberry Cheesecake Parfaits for YEARS and they’re still one of my favorite recipes for breakfast or an easy dessert after the kids go to bed. And as someone who doesn’t like to spend a lot of time making breakfast, the fact that these come together in just 5 minutes is a total game-changer!

Even my kids love the parfaits. Sometimes I freeze them and tell them it’s ice cream (they absolutely love it, and so do I) and they think they’re getting ice cream for breakfast! There are so many ways to make these your own. This is truly one of my favorite breakfast/dessert treats and I know you’re going to love them, too!

Why You’ll Love These Strawberry Breakfast Parfaits

  • 18 g Protein – I love how filling these are and a great way to add more protein to your daily routine!
  • 5 Minutes – That’s it. Just blend the cottage cheese with maple syrup and vanilla, then layer the parfaits.
  • Meal-Prep Friendly – Make these ahead of time and keep them in jars in the fridge for quick breakfasts or desserts all week long!
  • Tastes Like Strawberry Cheesecake! Literally. These are SO good.

Ingredients in Breakfast Parfaits

You’ll only need 6 simple ingredients to get started:

  • Cottage Cheese (opens in a new tab) – Higher in protein, I love how blended cottage cheese combined with other ingredients can taste like cheesecake. But if you’re not a fan, Greek yogurt works great, too!
  • Chia Seeds (opens in a new tab) (optional) – Chia seeds add protein and healthy fats. They also add texture to the parfait base!
  • Maple Syrup – Adjust to taste. I like to use less for a breakfast parfait, but a little more if I’m making a dessert parfait!
  • Vanilla
  • Fresh Strawberries – Frozen and thawed strawberries can work great in these, too.
  • Granola – Use homemade granola or your favorite store-bought option. Adjust the amount to taste!

Strawberry Cheesecake Parfait Dessert

Turn this breakfast parfait recipe into a dessert by adding a little extra maple syrup, some chocolate chips, and anything else you want! I love keeping them in these mini mason jars (opens in a new tab) in the fridge or freezer and grabbing one whenever I’m craving a sweet treat.

How to Store

Refrigerator – Place in small airtight containers, then store in the refrigerator overnight or for up to 2-3 days!

Freezer – Keeping the granola separate (as it may get soggy), store the cheesecake parfaits in small mason jars with airtight lids in the freezer for up to 2 weeks. When ready to enjoy, simply thaw the parfaits at room temperature for about 20-25 minutes and break them up with a spoon (for an ice cream texture) or in the fridge the night before.

What a great recipe! My teen daughter was over the moon for these. She’s normally skeptical about cottage cheese recipes, but this one got her “thumbs up” vote! 🙂 Thank you!
