- Eggs – Large eggs are the base of this recipe. You can substitute with egg whites, too. Just use 1 full cup of egg whites for the recipe.
- Cottage Cheese – I love the flavor cottage cheese adds to these bites. I used low-fat, but use whatever you prefer. You can substitute it with Greek yogurt or cream cheese as well.
- Salt – I’ve added a specific amount the the recipe, but feel free to adjust to your taste.
- Spinach and Red Bell Pepper – The textures and healthy additions of veggies make these SO GOOD! Check below for some other ideas for things you can add in.
- Salsa – This is the star of these delicious breakfast bites. Any simple salsa, either store-bought or homemade salsa will work.

This recipe comes together in just 3 easy steps. All you need is a whisk or blender, and a silicone muffin pan! Here’s how to make easy egg bites:
- Step 1: Blend together the eggs, cottage cheese, and salt.
- Step 2: Fold in the veggies and salsa, and pour into the silicone muffin tin.
- Step 3: Bake for 30 minutes, serve, and enjoy!

Veggies – There are endless options when it comes to adding veggies into your egg bites. I suggest avoiding things with high water content so the egg bites aren’t too moist. Greens like kale and arugula, mushrooms, onions, broccoli, carrots, and asparagus are all great options!
Cheeses – The cottage cheese gives them a slightly cheesy flavor, but you can add more in the blending process. Smoked Gouda, creamy gruyere, and salty parmesan would all make perfect additions. Other options to try are Monterey jack cheese or feta cheese.

Absolutely! Just let the egg bites cool completely, then slowly and carefully peel them off to prevent them from falling apart. If possible, though, a silicone mold pan works best!

- 1/2 cup low-fat cottage cheese (drained)

- 1/2 cup chopped spinach
- 1/2 cup chopped red bell peppers
- 2 Tablespoons salsa
Instructions
- Preheat the oven to 350 degrees F.
- Add the eggs, cottage cheese, and salt to the blender and blend until smooth.
- Fold in the chopped spinach, bell peppers, and salsa.
- Spray the silicone molds with avocado oil spray.
- Pour the egg mixture into muffin pan.
- Bake the egg bites for 30 minutes, or until firm and set. Allow to cool for 2 minutes and remove them from the mold.
