  1. Mash or blend the ripe strawberries.
  2. Mix with the oats ingredients (either in separate containers or one big container).
  3. Store with a lid overnight.
  4. In the morning, quickly melt the chocolate and pour a thin layer over the oats.
  5. Immediately add the crumbled freeze dried strawberries over the chocolate.
  6. Refrigerate for another 10 minutes to set, then enjoy!

Ingredients

Strawberry Overnight Oats

  • 8-10 medium ripe strawberries (mashed or blended)
  • 1 cup rolled oats
  • 1 Tablespoon almond butter (opens in a new tab)
  • 1 cup vanilla almond milk
  • 2 Tablespoons maple syrup (or to taste)
  • 1/4 cup vanilla Greek yogurt

Dark Chocolate Topping

Instructions

  1. Mash or blend the ripe strawberries.
  2. Divide the strawberries, oats, almond butter, milk, maple syrup, and yogurt into two containers.
  3. Mix, add lids, and refrigerate for 4-6 hours (or overnight).
  4. In the morning, melt the chocolate and coconut oil together in the microwave for about 30-45 seconds, stirring every 15 seconds.
  5. Pour the melted chocolate over the oats and spread into a very thin layer.
  6. Immediately add the crumbled freeze dried strawberries over the chocolate.
  7. Place in the fridge for another 10 minutes, then enjoy!
