I’ve been making these at home to save money and could not be more obsessed with the delicious flavor. And as a busy mom, I love that they can be made in just 15 minutes total time! What are Sofritas?

Sofritas are tofu that’s been sauteed in a spicy chipotle chili tomato sauce. They’re savory, a little bit sweet, and have the right amount of kick for a flavorful meal! They were made popular by the food chain, Chipotle, and are often placed in bowls with beans, rice, avocado, and fajita veggies, or in tacos. They’re a delicious vegan meat protein substitute!

Are sofritas vegan?

Yes! Since sofritas are made with tofu (and seasoned in a spicy chipotle chili tomato sauce), all of the ingredients are vegan. This makes for a great vegan protein idea!

I love adding a variety of protein sources to my meals and having some meals that are vegan or vegetarian throughout the week. This recipe is so perfect for that! Chipotle’s Sofritas are a little spicy for my taste, so I’ve adjusted the recipe to be extra flavorful with a subtle heat. You can always adjust the spice level as you like!

Sofritas Ingredients

For the Sofritas

  • Tofu – I prefer using extra-firm tofu for the texture and its firmness while still absorbing all of the delicious sauce flavors.
  • Tomato Sauce (opens in a new tab) – The sauce will meld all the flavors together and then coat and soak into the tofu. YUM!
  • Chipotle Chili Powder (opens in a new tab) and Smoked Paprika (opens in a new tab) – These give us a smoky flavor and a little heat. Add more of the chipotle powder if you like things spicier!
  • Cumin, Minced Garlic, and Oregano
  • Maple Syrup – The unexpected rockstar of flavor! Just a little sweetness cuts through the acidity and brings it all together.

For the Bowls

  • Cooked Rice (opens in a new tab) – Cook your own rice at home, or use pre-cooked rice packets to save time!
  • Lettuce – I love the refreshing taste of romaine lettuce in these bowls, it balances the Sofritas so well. However, feel free to use chopped kale or chopped spinach instead!
  • Black Beans
  • Avocado
  • You’re Favorite Toppings – Lime, fresh cilantro, chopped onions, sour cream…there are so many delicious options!

How to Make Sofritas

A healthy meal prep bowl that can be made in just 15 minutes? Yes, please! These have become one of my favorites to prep for the week ahead. Here’s how to make Sofrita Bowls:

1. Prepare the Tofu

Tofu is stored in water, so drain the water from the package and then remove the block of tofu. Wrap the tofu in a clean kitchen towel or double paper towel and gently press the tofu to remove the excess liquid. Replace the towel with a dry one, and repeat until the majority of the water has been released from the block.

2. Cook the Sofritas

Crumble the tofu into a non-stick skillet, (opens in a new tab) add the remaining ingredients, and stir gently. Cook over medium-high heat until all the liquid is coating the tofu and absorbed.

3. Put the Bowls Together

Divide the rice, Sofritas, beans, and lettuce between 4 airtight containers. Store them in the refrigerator until you’re ready to eat or enjoy right away! Wait until serving to top with fresh avocado and other toppings.

Tofu Sofritas Recipe Tips

  • Use firm or extra-firm tofu. It crumbles well, holds more texture, and absorbs flavors.
  • Pressing the extra liquid out of the block is essential, but doesn’t take long. Follow the directions to make it easy!
  • Stir it gently, and leave some larger crumbles. Tofu crumbles can fall apart if you stir them too roughly.

Just like Chipotle has a bunch of options – you too can make these Sofritas Meal Prep Bowls just how you like them! Here are some ideas:

Sautéed Veggies – Cook bell peppers, onions, corn, or the veggies of your choice in a pan and add them to the bowl.

Rice Substitute – Swap out rice for cauliflower rice, greens, or another grain like quinoa or farro (opens in a new tab).

Instructions

  1. Remove the tofu from the package and drain the liquid. Wrap the tofu in a clean towel or paper towels and gently squeeze, removing as much liquid as you can. Replace the towel or paper towel when they’re saturated.
  2. Crumble the dried tofu into a large non-stick skillet and add the remaining sofritas ingredients.
  3. Stir well and turn the heat to medium high.
  4. Cook the sofritas over the heat for about 10 minutes until the sauce is completely absorbed into the tofu and it begins to brown a bit.
  5. Add 1/2 cup rice to each bowl or meal prep container. Divide the beans, sofritas, and shredded lettuce evenly between bowls.
  6. Top with sliced avocado and your favorite toppings!
