Busy mornings have gotten SO real since school started last week, and these Meal Prep Breakfast Egg Bagels have been a total lifesaver! I’m someone who definitely has to eat breakfast to function, and I love that these bagels are full of protein and healthy ingredients. They’re even great for a quick lunch!

You can use any type of bagel you want, but I especially love these low-carb everything bagels. (opens in a new tab) I mix chopped spinach and bell peppers with my eggs, but the veggie options are endless! Simply bake the eggs in a baking dish, slice them, and add cheddar cheese to the bagels, microgreens or more spinach, and any sauce you want. Wrap them, freeze them, and then heat them up when you’re ready to enjoy!

  1. Preheat the oven to 375 degrees F.
  2. Drizzle the avocado oil in the bottom of an 8"x10" or 9"x9" baking dish.
  3. Whisk the eggs, chopped spinach, bell peppers, salt, pepper, and paprika together in a bowl.
  4. Pour into the baking dish and bake for 20-25 minutes.
  5. In the meantime, slice the bagels and toast them if desired.
  6. Slice the egg into 4 squares (a spatula works great for this) and place each one on a bagel.
  7. Add cheese, greens (optional), and anything else you want!
