Happy New Year, friends!!! Who’s excited about this new, fresh start?

I’m feeling all the new year feels right about now. The excitement of new potential, the hope of reaching my crazy new year goals, and the welcoming of change this year.

No, this isn’t some big announcement. Sorry, guys. I don’t actually have plans for any major changes this year, but you just never know! I just really like change and always welcome it in the new year! Last year at this time I NEVER would have predicted that we would move from Texas to Oklahoma and that Cody would start a new job. You never know what can happen in a year!

And although I’m not one to set New Year’s resolutions (like I talked about in the Matcha Chia Seed Energy Bites (opens in a new tab) post), I love setting goals for myself to achieve throughout the year.

Of course, we need to talk about the OBVS #1 New Year’s goal….all the HEALTHY things! Right? You might be here on Jar Of Lemons because you’re looking for healthy recipes for the very first time ever (welcome, friend!). Or maybe, like me, you’ve fallen off of the healthy eating bandwagon a tad during this holiday and it’s time to get back on track. Whatever your goal or reason for being here might be, I just want to say YOU CAN DO THIS!

Healthy living can be really difficult in today’s society. It’s so important to set REALISTIC goals and make achievable plans. Today, we’re talking about this delicious Lentil Turmeric Detox Soup to jumpstart our goals!

The whole “detox” thing is just a fancy name. This soup tastes nothing like “detox” soup in actuality. It’s AMAZING, y’all! And I don’t say that lightly.

And since it’s January, a warm, cozy, healthy, healing soup just seemed really appropriate. The soft chickpeas paired with wholesome lentils, tasty broccoli, and warm turmeric broth….heavenly. Just….heavenly. Did I mention this Lentil Turmeric Detox Soup only takes about 15-20 minutes to make?

It can also be made in the slow cooker, if you’re a slow cooker kind of gal. I’m definitely a slow cooker kind of gal! I mean, it’s basically the best invention ever. Just set it to cook on low for about 4 hours, and you should be good to go!

Lentil Turmeric Detox Soup

Vegan, Vegetarian, Gluten-Free
Prep: 15 minTotal: 15 min

Ingredients

Instructions

  1. Bring the broth, water, and lentils to a boil. Let boil for about 5 minutes, then lower heat.
  2. Cover and let simmer for about 5 minutes. 
  3. Add in the broccoli and chickpeas. Continue to simmer for another 5 minutes.
  4. Remove from heat and mix in the turmeric powder. Serve warm and enjoy!
