When I’m looking to make a healthy dinner recipe that can serve a crowd, this Slow Cooker Chicken Tortilla Soup is my go-to! Made entirely in a crock pot and with just 15 minutes prep time, this is the ultimate set-it-and-forget-it meal. My entire family has loved this recipe for years and I’m so excited to share my tested method for perfect Chicken Tortilla Soup every time!

Whenever we have family come to visit us and I need a meal that will go a long way, this Chicken Tortilla Soup recipe is hands-down the best. And while I love it for feeding a crowd, it’s also great as a healthy dinner idea on busy weeknights, too!

Just chop some veggies, add them along with chicken, broth, and seasoning into the slow cooker, and set it to cook. That’s it! It’s so easy to make and the crunchy tortilla chips on top truly take this soup to another level.

Healthy Chicken Tortilla Soup – Crock Pot Recipe

Last week my dad came to stay with us here in Oklahoma. We had a great time and spent a lot of evenings eating out (one of my fave things to do, y’all), but to put it simply: cooking for two grown men was slightly challenging. Not really, in the grand scheme of things, but I quickly realized that we couldn’t eat out every day for an entire week (ummmm, hello splurge week!). I knew I needed to make something that could go a long way for the three of us and still be healthy!

Why You’ll Love This Slow Cooker Chicken Tortilla Soup

Savory chicken slow cooked to perfection, creamy soup loaded with all the goods (beans, corn, celery, carrots, tomato sauce, the best ever taco seasoning (opens in a new tab)), and tortilla chips to top it all off. Did I mention this recipe is loaded with protein and also happens to be gluten and dairy-free? Excuse me while I devour this RN.

Chicken Tortilla Soup Healthy Ingredients

  • Chicken – I used chicken breasts in this recipe, but thighs would also work great!
  • Chicken Stock – Or vegetable stock.
  • Tomato Sauce
  • Cooked Black Beans
  • Corn – Canned or frozen.
  • Onion – Chopped
  • Whole Tomatoes
  • Celery Stalks – Chopped
  • Carrots – Chopped
  • Packet Taco Seasoning (opens in a new tab) – Mild or spicy, your choice! You can also use about 2.5 Tablespoons of taco seasoning if you have it in a jar.
  • Tortilla Chips

How to Make Chicken Tortilla Soup (Crock Pot Recipe)

It’s so easy to make chicken tortilla soup in the crockpot! Here’s how to put this recipe together:

  1. Add chicken, chopped veggies, and part of the chicken stock in the slow cooker, then cook on high for 2.5 hours or low for about 5 hours.
  2. Shred the chicken inside of the slow cooker, then add in the remaining ingredients and stir.
  3. Cook for another 1 to 1 1/2 hours (or 2-3 hours on low).
  4. Add tortilla chips and any toppings, enjoy!

Chicken Tortilla Soup Slow Cooker

This Healthy Chicken Tortilla Soup can be made entirely in the slow cooker! It's easy to make and perfect for the entire family. Gluten-free and delicious!

Ingredients

  • 2 medium chicken breasts (opens in a new tab)
  • 2 cups chicken stock
  • 15 oz. can tomato sauce
  • 1 cup black beans, canned
  • 1/2 cup corn
  • 1/3 onion, chopped
  • 15 oz. can whole tomatoes
  • 5 celery stalks, chopped
  • 3 whole carrots, chopped
  • 1 packet taco seasoning (1 oz.)
  • 2 cups tortilla chips

Instructions

  1. Place chicken breasts in the slow cooker with the chopped onion, celery, carrots, and 1/2 cup of the broth.
  2. Cook on high for 2 1/2 hours (or low for 5). Ensure chicken is about 90% cooked throughout. Shred the chicken inside of the slow cooker.
  3. Add the rest of the ingredients to the slow cooker and stir. Cook for another 1 - 1 1/2 hours on high or 2-3 hours on low (or until vegetables have softened).
  4. Add tortilla chips, serve, and enjoy!

    Hi! This might be a silly question but I always get mixed up. You said to use chicken stock in the ingredients and then refer to adding the broth. Is it chicken stock or chicken broth that is best?
