We’re a family of 5, so making this Spicy Southwest Salad copycat recipe at home has been a game changer! It’s quick and easy, and I love that I can make a big batch for an affordable price. It’s also healthy and full of veggies! I could eat this yummy salad every single day – it tastes just like the real deal!

  1. Marinade the chicken overnight (or for a few hours).
  2. Bake the chicken.
  3. Put the salad ingredients together.
  4. Add the chicken and toss.
  5. Drizzle with dressing and enjoy!

Instructions

Marinating the Chicken

  1. Mix the ingredients for the marinade together.
  2. Place the chicken in an airtight container or freezer bag and pour the marinade over it.
  3. Marinate the chicken overnight (or for at least 30 minutes before baking).

Making the Spicy Southwest Salads

  1. Preheat the oven to 350 degress F.
  2. Place the marinated chicken on a baking sheet and bake for 15 minutes.
  3. Add the chopped bell pepper to the baking sheet and continue to bake for another 15 minutes (or until the chicken is fully cooked).
  4. While the chicken is baking, make the salad dressing.
  5. Chop the spinach.
  6. In a large salad bowl, toss all of the salad ingredients together (except for the pepitas, tortilla chips, and dressing).
  7. Add the chicken and bell peppers once they are done baking and toss together.
  8. Plate each salad, add the pepitas, tortilla chips, and drizzle with dressing.
  9. Serve and enjoy!
