  1. Preheat the oven and line a muffin tin.
  2. Blend cottage cheese, maple syrup, vanilla, lemon juice, and eggs until smooth, then mix in melted and cooled coconut oil.
  3. In a large bowl, whisk together flour, baking powder, salt, and lemon zest.

Ingredients

  • 3/4 cup cottage cheese (opens in a new tab) (whole milk works best)
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 Tablespoons lemon juice
  • 2 large eggs
  • 1/4 cup coconut oil (opens in a new tab) (melted and cooled)
  • 1 1/2 cup all-purpose flour (or gluten-free all-purpose flour)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon lemon zest
  • 1/2 cup blueberries

Streusel Topping

  • 1/2 cup oat flour (opens in a new tab) (or all-purpose flour)
  • 1/3 cup brown sugar
  • 1 teaspoon lemon zest

  • extra blueberries (topping)

Instructions

  1. Zest the lemon for both the muffin batter and streusel.
  2. Preheat the oven to 350 degrees F and line a muffin tin.
  3. Combine the cottage cheese, maple syrup, vanilla, lemon juice, and eggs in a blender.
  4. Blend until smooth.
  5. Add in the melted and cooled coconut oil and blend.
  6. Mix the flour, baking powder, zest, and salt in a large mixing bowl.
  7. Pour the liquid mixture into the dry and mix until just combined.
  8. Fold in the blueberries.
  9. Pour the batter into the muffin tin.
  10. Mix the streusel topping and sprinkle over each muffin.
  11. Add extra blueberries over the streusel on each muffin.
  12. Bake for 25-30 minutes.
