One of our favorite healthy household staples for weeknight dinners is shrimp. I love that it’s so versatile and can take on so many different flavors, as well as work in so many different recipes! Whether we’re having Sriracha Lime Shrimp Tacos, Shrimp Spanish Paella, or Healthy Cajun Shrimp Gumbo, shrimp is a great option for a quick and healthy meals.

Today, I’m sharing one of the best healthy weeknight dinner recipes (and/or easy lunch recipe) that has truly become a staple for us: Easy Lemon Garlic Shrimp served over soft, fluffy quinoa! Serve it with broccoli, asparagus, squash, or any side dish of your choice for a yummy, simple meal that the family will love!

This recipe only requires a few ingredients! Cooked shrimp sautéed in avocado oil (opens in a new tab) (or any cooking oil) along with paprika, minced garlic, salt, pepper, and fresh lemon juice make up the base of this Easy Lemon Garlic Shrimp recipe. Serve the shrimp over cooked quinoa (opens in a new tab) with fresh parsley and veggies of choice (optional) to make it a yummy meal!

Making this Lemon Garlic Shrimp recipe is INCREDIBLY easy and only takes 20 minutes! Here’s how to make it:

1. Heat up the oil and garlic.

2. Sauté the shrimp, paprika, lemon juice, salt, and pepper.

3. Serve over cooked quinoa, fresh parsley (optional), and your choice of veggies!

Tips for taking this recipe to the next level

  • If using frozen shrimp, fully thaw them in advance.
  • This recipe calls for cooked shrimp. However, feel free to use uncooked shrimp instead! Simply add in a little bit of extra time for cooking the shrimp.

Ingredients

  • 16 oz. medium shrimp (cooked, deveined, tails-off)
  • 2 Tbsp avocado oil (opens in a new tab) (or any cooking oil)
  • 2 tsp minced garlic
  • 1/2 tsp paprika
  • 1/2 lemon (juiced)
  • salt/pepper (to taste)
  • 1 cup quinoa (cooked)
  • fresh parsley (optional)

Instructions

  1. Heat up the oil and garlic over medium heat.
  2. Add in the shrimp, paprika, lemon juice, salt, and pepper.
  3. Sauté for about 7-10 minutes, or until everything is warm.
  4. Serve over cooked quinoa with fresh parsley (optional) and enjoy!
