Chicken Breast – This recipe uses chicken breast cut into cubes. However, cooked rotisserie chicken is also a great option. Simply skip the steps that involve cooking the chicken, then add the remaining ingredients for the chili!

Chicken Broth – Chicken or vegetable broth both work wonderfully in this recipe and add tons of flavor.

  3. Add in the beans and broth, bring to a simmer.
  4. Add in the corn and seasoning.
  5. Continue to simmer for about 10 minutes.
  6. In a small bowl, whisk the yogurt with about 1/4 cup of warm water until smooth.
  7. Add the yogurt and cheese (optional) to the chili.
  8. Top with cilantro (optional), serve, and enjoy!

    Doubled the recipe. Didn’t have enough cannellini, chicken and yogurt to double so I added a can of kidney beans and a can of pinto beans. I left the chicken with just a pound, and I used 3/4 cup sour cream in place of the 2nd yogurt. It was very good. The spices were just right too. My husband went back for seconds.
