The filling of these empanadas is so flavorful and tasty! It has the perfect amount of moisture and is full of healthy ingredients. Here’s what you’ll need:

  • Onion and Bell Peppers – The mildly sweet flavors of yellow or white onions and colored bell peppers, like yellow, orange, and red bell peppers, are so good in the filling. Other options would be red onions and green bell peppers.

Ingredients

  • 2 Tablespoons oil
  • 1/2 medium white or yellow onion (diced)
  • 1 medium orange pepper (diced)
  • 1 medium red pepper (diced)
  • 2 Tablespoons minced garlic
  • 1/4 cup plain Greek yogurt
  • 2 cups shredded cooked chicken
  • 2 teaspoons smoked paprika (opens in a new tab)
  • 1 1/4 teaspoons cumin
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped spinach
  • 1/4 cup fresh cilantro
  • 12 empanada dough shells (or 5” circles cut from store-bought puff pastry)
  • 1 large egg

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Heat the oil in a skillet and sauté the diced onions and peppers. Sauté for about 5 minutes.
