  • Milk – You can use whatever milk you want for this recipe. Avoid milk with a strong flavor like coconut milk, and make sure it’s unsweetened, but really any plant-based milk or regular milk will do! I used 2% in this recipe.
  • Shredded Cheddar Cheese – Sharp cheddar has a stronger flavor than mild, so choose your cheddar based on what you like.
  • Ground Beef – Any meat would do for this recipe, or make it vegetarian by leaving out the meat! Sausage, ground turkey, and ground chicken are all yummy options.
  • Cream Cheese & Greek Yogurt – Creaminess, tanginess, and extra protein are all thanks to these two ingredients. You can use lower-fat products for both ingredients if you want to.
  • Rotel (opens in a new tab)– A canned product that has diced tomatoes and green chiles all in one! It’s available in mild, original, or hot, so choose what you want for your dip. If you can’t find it, use diced canned tomatoes and canned diced green chilies.
  • Taco Seasoning (opens in a new tab) – Use half a store-bought packet or 1 Tablespoon of your favorite Mexican seasoning.

How to Make Rotel Dip with Cream Cheese

Easy and quick, this homemade cheese dip comes together in just 20 minutes. Here’s how to make Rotel Dip in 5 simple steps:

  1. In a saucepan, melt the shredded cheese into the milk.
  2. Cook the ground beef in a skillet at the same time.
  3. Add the cream cheese and Greek yogurt into the melted cheese and stir until everything is melted and creamy.
  4. Add the Rotel, seasoning, and ground beef.
  5. Stir, top with garnishes, serve, and enjoy!

  1. Cook the ground beef in a skillet.
  2. Add all the ingredients to the crock pot and turn the temp to low.

Storing Rotel Dip with Ground Beef

Storing – Allow the dip to cool completely. Transfer it to an airtight container and store it in the fridge for 3-4 days. I do not suggest freezing it.

Reheating – Reheat leftovers slowly in the microwave or the stovetop. Stir often until it is completely melted, adding a Tablespoon or two of milk if needed.

Cream Cheese Rotel Dip

Ingredients

  • 1/4 cup milk (or unsweetened plant-based milk for less dairy)
  • 2 cups shredded cheddar cheese
  • 1/2 pound lean ground beef
  • 4 ounces cream cheese
  • 1/2 cup plain greek yogurt
  • 1 10-ounce can rotel tomatoes and green chilies
  • 1/2 packet taco seasoning (opens in a new tab) (adjust seasoning to taste)
  • cilantro, chopped tomatoes, bell pepper (for garnish)

Instructions

  1. Add the milk and shredded cheese to a pot on the stove. Heat over low heat or use a double boiler, and melt. Stir regularly to prevent burning.
  2. Meanwhile, add the ground beef to a skillet and cook over medium heat until cooked through.
  3. Add the cream cheese and yogurt to the cheese mixture and mix well until smooth and creamy.
  4. Add in the rotel and taco seasoning.
  5. Fold in the ground beef.
  6. Garnish with lots of fresh cilantro, chopped bell peppers and/or chopped tomatoes and serve.
