Seasoning – Stir together a mix of chili powder, smoked paprika, coriander (or cumin, if you don’t have coriander on hand), salt, pepper, and a tiny bit of cayenne (optional) to make the best, most flavorful tacos.

Barbecue Sauce – The sauce in this recipe is a mix of barbecue sauce, tomato sauce, and a small amount of apple cider vinegar.

Onion/Garlic – Fresh onion and garlic work taste best in this recipe, but onion powder and garlic powder are also great options.

Corn Tortillas – I used corn tortillas as a delicious gluten-free option, but any type of tortillas will taste amazing. Whole wheat flour tortillas, low-carb tortillas, or a mix of corn/flour are all great options!

Ingredients

Jackfruit "Pulled Pork"

Jackfruit Tacos

  • 8 medium corn tortillas
  • 1 cup fresh cilantro leaves
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup cotija cheese (or crumbled feta)
  • 1 medium avocado, sliced (optional)

Instructions

        I would think it would freeze ok for a taco bar since it freezes well for leftovers. However, I would say heat it up with some oil in a pan or cast iron skillet (instead of the microwave)!
