The flavor-packed Rotel and lean ground beef is stirred into creamy, melted cheese, then seasoned and topped with fresh cilantro and chopped veggies. It's guaranteed to be a crowd-pleaser for cookouts, parties, or just a healthy, savory snack at home!

Instructions
Add the milk and shredded cheese to a pot on the stove. Heat over low heat or use a double boiler, and melt. Stir regularly to prevent burning.
Meanwhile, add the ground beef to a skillet and cook over medium heat until cooked through.
Add the cream cheese and yogurt to the cheese mixture and mix well until smooth and creamy.
Add in the rotel and taco seasoning.
Fold in the ground beef.
Garnish with lots of fresh cilantro, chopped bell peppers and/or chopped tomatoes and serve.
Notes
Storing - Allow the dip to cool completely. Transfer it to an airtight container and store it in the refrigerator for 3-4 days. I do not suggest freezing it.Reheating - Reheat Rotel dip slowly in the microwave or the stovetop. Stir often until it is completely melted, adding a Tablespoon or two of milk if needed.
