Cream Cheese Rotel Dip

High in protein and easy to make, you'll love this Healthier Rotel Dip recipe! The flavor-packed Rotel and lean ground beef is stirred into creamy, melted cheese, then seasoned and topped with fresh cilantro and chopped veggies. It's guaranteed to be a crowd-pleaser for cookouts, parties, or just a healthy, savory snack at home!

Ingredients

  • 1/4 cup milk or unsweetened plant-based milk for less dairy
  • 2 cups shredded cheddar cheese
  • 1/2 pound lean ground beef
  • 4 ounces cream cheese
  • 1/2 cup plain greek yogurt
  • 1 10-ounce can rotel tomatoes and green chilies
  • 1/2 packet taco seasoning adjust seasoning to taste
  • cilantro, chopped tomatoes, bell pepper for garnish

Instructions

  • Add the milk and shredded cheese to a pot on the stove. Heat over low heat or use a double boiler, and melt. Stir regularly to prevent burning.
  • Meanwhile, add the ground beef to a skillet and cook over medium heat until cooked through.
  • Add the cream cheese and yogurt to the cheese mixture and mix well until smooth and creamy.
  • Add in the rotel and taco seasoning.
  • Fold in the ground beef.
  • Garnish with lots of fresh cilantro, chopped bell peppers and/or chopped tomatoes and serve.

Notes

Storing - Allow the dip to cool completely. Transfer it to an airtight container and store it in the refrigerator for 3-4 days. I do not suggest freezing it.
Reheating - Reheat Rotel dip slowly in the microwave or the stovetop. Stir often until it is completely melted, adding a Tablespoon or two of milk if needed.
