I mixed up this recipe by turning these into a light, fluffy, savory pancake-meets-omelet situation (in the best way) that makes them SO perfect for all the toppings. But honestly? They’re even deliciously just plain without any toppings!

I can’t get over how easy these are for the best healthy breakfast. Just blend, pour, cook, flip. That’s it! 10 minutes, 3 ingredients, low calorie and high protein. Even my kids love these, especially when they get to pick out their own toppings!

Cottage Cheese – The star of the show! Blends up smooth and adds a creamy, slightly tangy flavor. I recommend full-fat for the best texture, but low-fat works too.

  1. Blend It Up – Add the cottage cheese, eggs, and seasoning to a small blender. Blend until completely smooth and pourable.
  2. Heat Your Pan – Preheat a non-stick skillet with oil or spray over medium heat.

      I haven’t tried it with just egg white but I don’t see any reason why not! I would say you’ll need about 1/4 cup egg whites. Enjoy!

    How did anyone get these to flip? Mine were a disaster. Tips?

      So glad you made these! My tips are to be sure to cook them for the 1-2 minutes and making sure the edges are set before trying to flip them. It makes a big difference. Also, using a non-stick pan and spraying the pan with oil.
