I wanted to create a plant-based smoothie that embodied these yummy flavors and made for a healthier version of the ice cream treat!

Frozen Bananas – Freeze bananas ahead of time for this smoothie or buy frozen bananas from the store for this recipe.
Cashew Milk – Cashew milk, almond milk, and coconut milk (so yummy in this smoothie) are all delicious options. Really any plant-based milk works great!
Almond Butter – I love adding almond butter, cashew butter, or any nut butter for that signature Chunky Monkey flavor (and not to mention healthy fats + protein)!

- 2 medium frozen bananas
- 2 cups cashew or coconut milk
- 1 Tablespoon almond butter (opens in a new tab) (or cashew butter)
- 1/4 cup vanilla protein powder (opens in a new tab)
- 1 cup ice cubes
Mix-Ins & Toppings (divided)
- 1 Tablespoon vegan chocolate syrup (opens in a new tab) (or 1 Tablespoon cocoa powder blended into smoothie)
- 1 Tablespoon chocolate chips (opens in a new tab) (dark or vegan)
- 1 Tablespoon chopped walnuts
Instructions
- Blend the frozen bananas, cashew milk, almond butter, protein powder, and ice cubes together until smooth.
- Pour the smoothie into 2-4 glasses.
- Divide and mix in the chocolate syrup into each smoothie (or blend into the smoothie).
- Top each smoothie with chocolate chips and chopped walnuts.

Any type of protein powder works great, but you can also just omit it if you want. If you’re looking to thicken the smoothie, feel free to add pb2, almond flour, or just more ice!
