It’s easy enough to make as a busy weeknight side dish, while still tasting impressive enough for gatherings with friends or even the holidays. And after years of testing this recipe, I can honestly say it’s perfect!

Ingredients for Gluten Free Macaroni and Cheese

Shells and Sauce

  • Gluten-Free Elbows (opens in a new tab) – Penne, shells, or bowtie pasta works great, too!
  • Butter
  • Gluten-Free All-Purpose Flour (opens in a new tab)
  • Milk – Plant-based alternatives work too, but you want to make sure that the milk is thick and creamy. Regular milk or whole milk works best, but creamy oat milk or cashew milk (unflavored and unsweetened) are also great options.
  • Sharp Cheddar Cheese
  • Shredded Mozzarella
  • Parmesan Cheese – Grated is best.
  • Garlic Powder
  • Salt/Pepper

How to Make Baked Mac and Cheese

It is truly SO easy to make this Gluten-Free Mac & Cheese recipe! All you need is a pot to boil the pasta, a saucepan for the cheese sauce, and a baking dish or casserole dish. Here’s how to put it together in 7 simple steps:

  1. Cook the gluten-free pasta according to package directions.
  2. While the pasta cooks, melt the butter in a saucepan.
  3. Whisk in the gluten-free flour, then slowly pour in the milk and seasoning.
  4. Let simmer over medium heat to thicken the sauce.
  5. Remove from heat and add in the three types of cheeses.
  6. Add the pasta back in to the mixture, stir, then pour into a baking dish or casserole dish.
  7. Top with parmesan and breadcrumbs, then bake at 400 degrees F. for 20-25 minutes!

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions.
  2. Preheat the oven to 400 Fahrenheit.
  3. Meanwhile, melt the butter in a sauce pan.
  4. Whisk in the flour until smooth.
  5. Slowly pour in the milk, then add in the salt, pepper, garlic powder.
  6. Simmer over low heat until the milk starts to thicken, whisking regularly.
  7. Remove from the heat and whisk in the cheeses until melted.
  8. Combine the sauce with the pasta and stir to combine.
  9. Transfer to a baking dish, top with breadcrumbs and extra parmesan.
  10. Bake for 20-25 minutes or until the top is golden brown.
  11. Serve immediately and enjoy!

    Great recipe! Especially if you use a high quality cheddar. Only one thing I would do differently…skip the baking step! We found baking it dried it out and it was much creamier before baking
