Peach Salad Recipe

This Peach Mozzarella Salad with the best balsamic vinaigrette has been a staple in our home lately! I've been making this exact peach salad for YEARS and while it's simple, it's also so flavorful, delicious, and truly the best. Make this easy summer salad in just 20 minutes!

Ingredients

Peach Mozzarella Salad

  • 2-3 large peaches diced or sliced
  • 6-7 cups spinach loosely chopped
  • 8 ounces mozzarella
  • 1 large avocado
  • 1/2 cup chopped walnuts
  • 3-4 cups diced cooked chicken

Balsamic Vinaigrette

  • 1 Tablespoon Dijon mustard
  • 1/2 teaspoon minced garlic
  • 1 Tablespoon honey or agave syrup
  • 2 1/2 Tablespoons balsamic vinegar
  • 1/4 cup olive oil
  • 1/4 teaspoon salt

Instructions

  • Loosely chop the spinach and add to plates or a large salad bowl.
  • Add diced or sliced peaches, mozzarella, avocado, walnuts, and cooked chicken.
  • Combine the balsamic vinaigrette ingredients in a salad shaker or mason jar and shake until smooth.
  • Pour over the salads or set next to the salad bowl for serving.
  • Enjoy!

Notes

  • Tip: This salad is best when it's made with very ripe peaches!
  • To Make Ahead - Place each salad ingredient in a separate container, chopped and prepped, and add an airtight lid. You can also make the balsamic vinaigrette ahead of time and keep it in a mason jar. Store in the refrigerator for 1-2 days or until ready to combine!
  • Storing Leftovers - If you have leftover salad that's already been combined, place it in an airtight container and store in the fridge for up to 3-4 hours.
