This Chicken Broccoli Stuffing Casserole has been one of my favorite holiday recipes for YEARS! It works great as a unique holiday main dish, or Thanksgiving side dish, or my personal preference: a quick and easy weeknight dinner during the busy holiday season. Every bite is full of warm, cheesy chicken broccoli stuffing goodness – even my kids love it!

If you’re looking for the ultimate holiday vibes in a main dish, side dish, or easy dinner, this chicken and broccoli casserole with stuffing is truly the best! It’s also a great way to use up leftover stuffing mix.
The entire thing is quickly cooked on the stovetop and placed in a casserole dish, topped with cheesy goodness, and then baked for 20 minutes. My kids ask for this meal every year when the weather starts to cool down and I’m so glad they do, because I love it, too!

Chicken Stuffing Casserole Ingredients
- Carrots/Celery/Onion – Want to add more veggies? Feel free to add a little more diced carrots and/or celery, or add any sautéed vegetables that sound good.
- Olive Oil – The oil in this recipe is for cooking, so technically any cooking oil (like avocado oil (opens in a new tab)) works great. However, olive oil adds tons of flavor!
- Boxed Stuffing Mix – This stuffing mix (opens in a new tab) is a classic and works great in this recipe. It’s the ultimate comfort food!
- Chicken Broth – Water works as well, but the broth in this recipe really adds flavor and brings it to life.
- Cooked Chicken – Any type of cooked chicken works great! Cooked shredded chicken breast, cubed chicken, or shredded rotisserie chicken are all perfect.
- Broccoli Florets – Since the broccoli florets are steamed before starting the recipe, feel free to use fresh broccoli or frozen broccoli. The kind that steams in the bag always works great for me when I’m in a rush!
- Cream of Chicken Soup – The cream of chicken soup (opens in a new tab) can also be substituted for cream of broccoli soup or cream of mushroom soup.
- Salt/Pepper – This Chicken & Broccoli Stuffing Casserole is pretty flavorful as it is, but feel free to add more seasoning to taste. Some ideas include garlic powder, (opens in a new tab) dried parsley, dried or fresh thyme, or dried basil!
- Cheddar Cheese – It’s not a cozy casserole without a hefty handful of shredded cheese on top!

How to Make Chicken Broccoli Stuffing Casserole
This recipe is truly one of the easiest ever. Here’s how to make Chicken Broccoli Stuffing Casserole:
- Sauté the carrots, celery, and oil in a large pan.
- Add in the stuffing mix and chicken broth and cook.
- Meanwhile, stir the chicken, broccoli, condensed soup, salt/pepper, and cheese together in a large bowl.
- Add to a casserole dish (opens in a new tab) or baking dish and top with the stuffing mixture.
- Top with cheese and bake!

How to Store Chicken and Stuffing Casserole
Refrigerator – Store in an airtight container and keep in the fridge for up to 3-4 days. Reheat it in the oven for best results!
Freezer – Place the casserole in an airtight container and freeze for up to 1-2 months. To reheat, warm it in the microwave for a few minutes to thaw, then finish warming it up in the oven to keep the stuffing from getting soggy.
Heating Up Leftovers
In my experience, stuffing is always best served fresh. However, if you have leftovers of this casserole, you can definitely store them in an airtight container and reheat them to enjoy another tasty meal!
To reheat: Place the casserole in the oven for about 10-15 minutes. You can also heat it up in the microwave, but you run the risk of the stuffing getting a little soggy. So I recommend heating it up in the oven instead!

Broccoli Chicken Casserole with Stuffing
Equipment
Ingredients
- 1 large carrot, diced
- 1 medium celery stalk, diced
- 1 cup diced yellow onion
- 2 Tablespoons olive oil (opens in a new tab)
- 1 box stove top stuffing (opens in a new tab) (6 ounces)
- 1 1/2 cups chicken broth
- 2 cups cooked chicken, cubed or shredded (about 2 large chicken breasts)
- 2 cups broccoli florets, steamed
- 2 cans condensed cream of chicken soup (10 ounces)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 cups cheddar cheese, divided
Instructions
- Preheat the oven to 350 degrees F.
- Saute the diced carrot, celery, and onion with the olive oil for about 5-7 minutes.
- Add in the boxed stuffing and chicken broth and cook down for 5-10 minutes. Set aside.
- Meanwhile, add the chicken, steamed broccoli florets, condensed soup, salt, pepper, and 3/4 cup of the cheese to a bowl. Toss well to combine.
- Transfer to a large casserole dish.
- Top with the stuffing and the remaining cheddar cheese.
- Cover with foil and bake for 20 minutes.
- Serve immediately and enjoy!
